TRAINING SYSTEM.

VINIFICATION.
Classic vinification in red. The must remains in maceration on the skins for 6-8 days in order to obtain a wine with great body, colour and fragrance. The fermenting temperature is maintained between 26-28°C.
AGEING.
In stainless steel tanks.
TASTING NOTES.
The colour is ruby red, the nose has a complex and varied bouquet of well-ripened small fruits. It has a velvety, harmonious and persistent taste. The deepest soul, niger-mavros, twice black, like the starry nights in vineyards guarded by the moon light, which makes the warmth and scents of the Mediterranean concentrate in the thick skin.
FOOD PAIRING.
It is a wine that goes perfectly with first courses, boiled meat roasts, strong dishes and cheeses.
